After preparing your tortillas using a tortilla press, mix the following ingredients in a large bowl:

  • 1/2 cup diced beef
  • 1/4 cup diced bell bell pepper
  • 1/4 cup corn kernels
  • 1/4 cup steamed peas and carrots
  • 1 tablespoon chopped green onions
  • 1 tablespoon fresh chopped cilantro

Then add to the mixture 1 cup of barbecue sauce, 2 tablespoons of Worcester sauce, 1 tablespoon of balsamic vinegar, 1 tablespoon of mustard and a pinch of red peppercorns. After stirring the stuffing vigorously, cook it in a non-stick pan over medium heat for 10 minutes. For toppings, we recommend some crispy tortilla chips or fiery roasted corn kernels.

In a large bowl, mix ...

  • 1/2 cup roasted pineapple chunks
  • 1/4 cup sliced bananas
  • 1/4 cup mixed berries
  • 1/4 cup almond pieces
  • 1/4 cup mango and pineapple slices
  • 2 tablespoons maple syrup

Add 2 tablespoons of orange juice and 3 tablespoons of fresh mint leaves before placing the filling in a non-stick frying pan over medium heat for 5 to 7 minutes.
